Peanut Brittle

1 lg. c. peanuts (6 oz.)
2 sticks butter
1 c. sugar
3 T. water
1 t. vanilla

1. Spread peanuts evenly on pan.
2. In a heavy saucepan, cook butter, sugar and water over medium-high heat.
3. Stir constantly.
4. Mixture will turn yellow, then beige and finally a caramel color (10-15 minutes).
5. Add vanilla slowly at caramel color stage.
6. Pour mixture over peanuts.
7. Cool a very long time.
8. Freezes well.
